Fruit cake is a traditional british christmas cake that is full of fruits, some prefer to add in nuts and laced with alcohol, usually brandy. This gives the fruit cake a subtle brandy flavor and a moist texture, plus it also allows the fruit cake to be stored for a long time. I always enjoy eating it with a cup of espresso. For this recipe of mine, I had replaced the brandy with gula melaka, a more towards local delights. The taste is perfectly speechless and dropping in a few more pieces can really satisfy those craving! Yummy!

~ Steamed Gula Melaka Fruit Cake ~
Ingredients:
120 g palm sugar, grated
80 g sugar
250 g butter, melted
3 large eggs
350 g self raising flour
1 tsp bicarbonate of soda
1 tsp baking powder
200 g mixed dried fruits
100 g palm sugar and boiled with 50 ml water, set aside
Methods:
1. Hand beat melted butter, palm sugar and sugar until creamy.
2. Add in egg gradually and mix well.
3. Separate 180 g of flour and mix to the dried fruits, set aside.
4. Fold in the rest of the flour to the butter mixture.
5. Then fold in the dried fruits flour mixture.
6. Pour in the boiled palm sugar into the mixture and blend well.
7. Pour batter into a greased cake tin, leveled the batter and steam HIGH heat for 1 hour or until cooked.
