Almond Jelly with Lychee - 荔枝杏仁果冻
Quick and easy chinese dessert, it is often served in many chinese restaurants in Asia. It is made of gelatin cooked in milk and flavored with almond essence. The sweet almond jelly cubes are served with lychees in syrup, some would preferred to serve with longans. If you are tired of the same old gelatin recipes, this delicious and refreshing almond jelly is the best choice to satisfy your sweet-tooth.

~ Almond Jelly with Lychee ~
Ingredients:
2 cups fresh milk
1/4 cup sugar
1 can lychee in syrup
15 g unflavored gelatin powder
1 tsp almond essence
Methods:
1. Combine 1 3/4 cups fresh milk and sugar in a saucepan and bring to boil.
2. Then lower the heat and let it simmer for 2 minutes until sugar dissolves.
3. In a 8x8 tin, pour the remaining 1/4 cup of cold fresh milk and 2 tbps of lychee syrup.
4. Add in gelatin powder over the cold mixture and stir until gelatin powder is completely dissolved.
5. Pour in the heated milk over the gelatin mixture and mix well.
6. Stir in almond essence and let it cool slightly.
7. Refrigerate for 2 hours to set and firm.
8. When it's completely set, cut almond jelly into cubes.
9. Put the jelly cubes with lychee and the remaining lychee syrup in a bowl, and chill for another hour before served.
