Acar Timun (Pickled Cucumber) - 胡瓜阿杂

This healthy yet simple and refreshing chilled salad is just bursting with a fusion of flavors. For me I prefer to use Japanese cucumber, it gives additional crunchiness to the dish - the preparation of the ingredients are a bit time consuming, but trust me the results worth every efforts. It tastes better when chilled overnight in the fridge, and it can be fridge up to 4 weeks. Wait no more, give this a try when your mood strikes... it’s like a tropical vacation in your mouth!

Ingredients:
1 big local onions, thinly sliced 1.5 inch
3 japanese cucumber, cut lengthwise 1.5 inch
1/2 pineapple, cut chuck 1.5 inch
2 chilies, removed seeds and slice 1 inch
8 tbsp vinegar
4 tbsp sugar
Salt to taste

Methods:
1. Combine all ingredients and mix thoroughly
2. Refrigerate it overnight before served
