Apam Balik - 慢煎粿
Apam Balik, also known as "Peanuts Turnover Pancake" or "Ban Jian Kueh" is a type of griddle cake which is usually sold at the specialist roadside stalls with 3 to 4 copper pans lined up, and baking this yummy pancake slowly to perfection. It has tasty fillings of sugar and peanuts, some with creamy sweet corns as optional. The texture of apam balik is akin to crispier form of crumpets and it's every Malaysian all time favorite delicates.

~ Apam Balik ~
Ingredients:
Filling:
Peanuts (roasted & crushed)
Sugar
Unsalted butter / Planta marginerin
Creamy sweet corn, options
Pancake:
200 g plain flour
150 g sugar
Pinch of salt
1/2 tsp baking soda
2 tsp baking powder
2 eggs
30 g corn flour
200 ml water
Methods:
Pancake:
1. Mix all pancake ingredients in a bowl till smooth and sieve it.
2. Set aside in fridge for 4 hours.
3. No need to oil the pan, scoop the batter, pour, swirl evenly and cover the lid over medium heat.
4. When batter starts bubbling, add some margarine until it melts evenly.
5. Put some peanuts, sugar and creamy sweet corns all over the batter and lift up once cooked.
6. Fold the pancake into 2 on a plate and serve while warm.
