Deep Fried Sesame Balls - 芝麻煎堆

Deep Fried Sesame Balls is one of the famous tea time snacks in Malaysia. The commoner is a famous and new year delicacy among chinese. The malays also has a similar type but commonly known as Kuih Bom. It is prepared with a mixture of glutinous flour and wheat/rice flour. The filling varies according to preference - green bean paste, red bean paste, lotus seed paste, peanut paste or dedicated coconut are some type of fillings that one can come across when biting into this traditional balls. My recipe is done with peanut paste and is really tasty. The finished balls are golden and chubby with the sesame seeds, the outer layer is crispy and the inner layer is soft and puffy.



~ Deep Fried Sesame Balls ~

Ingredients:

(A)
30 g wheat starch 
75 ml water

(B)
120 ml water
30 g sugar
A pinch of salt

(C)
150 g glutinous rice flour
3 tsp baking powder
1 tbsp cooking oil

(D)
150 g crushed roasted peanuts
50 g sugar
1 tbsp water
Sesame seeds

Methods:

(A)
1. Warm wheat flour over a pot of simmering water.
2. Boil the water and mix the flour until smooth.
3. Cover and set aside.

(B)
1. Mix water, sugar and salt.
2. Bring to boil till sugar melted, set aside.

(C) 
1. Mix glutinous rice flour and baking powder.
2. Slowly add in (B), then cooking oil and (A) to knead for 1 minute.
3. Cover the dough and rest for 10 minutes.

(D) 
1. Mix and stir fry peanuts and sugar with water.
2. Divide dough into 15 g each, make 25 balls.
3. Flatten the dough, fill with peanuts mix (8 g each) and wrap it.
4. Roll into round ball and coat with sesame seeds.
5. Cover the dough with cloth from time to time.
6. Deep fry over low heat till it puff up and turns golden brown.
