Simplified Chinese Steamed Egg Cake - 简化水蒸鸡蛋糕

This is a simplified steamed egg cake recipe which is very easy to whip up at home. It uses only 3 types of ingredient i.e. flour, egg and sugar. The ideal steamed egg cake is fragrant, light and airy but this is a simpler versions, thus it is not as airy as those traditional ones. In my opinion the most important part is to make sure you use high grade eggs as the ingredient list does not involve any strong flavorings, the eggs produce a lot of the fragrance to the steamed cake. 

I think steamed cakes are a nice alternative to baked cakes at times and according to Chinese tradition, baked methods carry an element called "heatiness" which is hard to explain in English. Essentially, traditional Chinese medicine advocates balance, hence there must always be the right amount of cooling and heat element in one's body - consuming too much "heaty" food can cause the body to lose the said balance. Hence the steaming method is always considered as the healthier alternative.

~ Simplified Chinese Steamed Egg Cake ~

Ingredients:
2 eggs (high grades)
50 g sugar
60 g cake flour

Methods:
1. Hand whisk the egg till fluffy.
2. Add in sugar, continue to whisk until it turns white.
3. Sift the flour into the mixture and use fold in method to mix well.
4. Pour into a lined cake tin and steamed over HIGH heat for 10 minutes.
