Bread Maker Mee Hoon Kueh - 面包机面粉粿

I personally love those authentic Mee Hoon Kueh which is torn into pieces by hands especially it is thick, rather than that using noodle maker. The pinching of the dough seems to give it extra texture and make it taste better. Maybe it's just because that's the true blue homemade method how I see many elderly used to make it. This is a pretty healthy dish covering with major food groups of carbohydrates (flour), protein (pork), fiber (vegetables) and calcium (anchovies). The anchovies stock gives the soup its distinctive flavor although it can be substituted with chicken or vegetable stock. 

Well this homemade Mee Hoon Kueh or some called Pan Mee makes so easy with bread maker nowadays. Traditionally the dough was made using hand kneaded method, now with the aid of bread maker I just can't believe it - the dough can be done within 20 minutes without much laboring tasks! From the entire process to a bowl of tasty and springy Mee Hoon Kueh takes less than 45 minutes to be served on the table. If you are concerned about the texture, rest assured this recipe will not disappoint you! ~ Bread Maker Mee Hoon Kueh ~

Ingredients:

Dough:
500 g flour / 面粉
200 ml water / 水
1 beaten egg / 鸡蛋
1 tsp salt / 盐
1 tbsp cooking oil / 食油

Methods:
1. Add all dough ingredients into the baking bucket.
2. Select MENU 9 MIX, TIMER to 20 minutes.
3. After done, take the dough out and allow it to rest for 30 minutes or keep overnight in refrigerator.
4. Flatten the dough and pinch the dough into small flat pieces (Mee Hoon Kueh) then set aside.

Soup Base Ingredients:
100 g anchovies / 江鱼仔
400 g minced meat / 肉碎
6 dried mushrooms / 香菇
Fish balls / meat balls / 鱼丸或肉丸
A bunch of Mani Chye or Choy Sum / 马尼菜或菜心
3 liter water / 水
2 cubes ikan bilis stock granules / 江鱼仔调味精
Salt & pepper to taste / 适量盐和胡椒粉
Some chopped garlic / 少许蒜米
Chopped spring onion or coriander leaves / 葱或香菜

Methods:
1. Marinate the minced meat with some salt, pepper, sesame oils and cornstarch. Set aside.
2. Heat up some oils to fry anchovies until golden and crispy. Dish out.
3. Use the remaining oil, fry garlic until aromatic then add in mushrooms.
4. Add in water and bring it to boil for several minutes.
5. Add in minced meat, seasonings to taste.
6. Bring the pinched Mee Hoon Kueh to cook, when it floats up means it is cooked then add in the vegetables.
7. Once vegetables are cooked, dish into individual bowl to serve. 
8. Tip with fried anchovies and chopped spring onions or coriander leaves.   
9. Served with chilies in soy sauce.

*You can also cook it using dried Mee Hoon Kuey method.
